The raw juice, extracted during pressing, is transferred from presses to an evaporator system where it is initially subjected to concentration and dearomitization. The intermediate concentrate leaves the evaporator system to be put to enzymation and filtration. The clear intermediate concentrate is transferred back to the evaporator system where it is finally concentrated to the required level of concentration passing through four consecutive stages. Then, the concentrate is cooled down.
